The Ramos Official Gin Fizz (aka The One And Only One) - Created in 1888 by Henry Charles Ramos whilst working at the Imperial Cabinet Saloon., New Orleans.
A drink that well and truly deserves its place amongst the New Orleans greats, like the Sazerac, Brandy Crusta and Mint Julep.
In 1907, Henry Ramos opened his own bar, The Stag, just a few blocks away from the Imperial Cabinet Saloon. The drink was to be shaken anywhere between 20-30 minutes to achieve the desired silky smooth texture. Behind the bar Henry would have a small army of shaker boys, just to keep up with the orders. In Mardi Gras, 1915, it is said that even with 35 shaker boys, they were still unable to keep up with demand.
Henry Ramos' Recipe, published in 1928:
One tablespoonful powdered sugar
Three or four drops of orange flower water
One-half lime (juice)
One-half lemon (juice)
One jigger of Old Tom Gin (60ml)
The white of one egg
One-half glass of crushed ice (wet shake)
About two tablespoonsful of rich milk or cream
•Together well shaken and strained
(Try 4minutes dry shake, 2 minutes wet shake)
•A little Seltzer water (30ml or to top of glass) to make it pungent
